It's the New Year! We all have good intentions of starting it off right. Why not make my Ultimate Homemade Larabars for a wholesome snack? They are made from grinding fruit and nuts to give you a boost of energy as well as filling you up.
I purchased a few bars at the store for my son, Ryan, who needed something that was easy to carry and eat after his brutal ski team workouts. After looking at the price and checking out the ingredients, I knew there was no excuse why I wouldn't make these myself.
There are numerous variations you can create for these bars. This particular recipe was a huge hit in my family and some of the ingredients may surprise you.
Cashews, almonds, dates, raisins, cinnamon, ginger, and cayenne pepper make these bars go from ordinary to extraordinary.
What are some of the benefits of the spices? Well...
- Cayenne pepper in a nutty fruit bar? Why not? Cayenne pepper is great for circulation.
- Ginger is one of my favorite spices. I use it for its anti-inflammatory benefits. If there is a way other than taking a pill that can help ease joint pain, I'm going to do it. I love the flavor and spiciness of ginger.
- Cinnamon is a powerhouse of a spice as well. It regulates blood sugar.
To make these Ultimate Homemade Larabars, simply add the ingredients to your food processor and process until the mixture begins to stick together. It will start to clump up and come away from the sides. It may take about two minutes. The more you process it, the better it will bind.
Line a 9x5 inch loaf pan with enough plastic wrap to have an overhang over the long edge.
Transfer the mixture into the lined loaf pan and press down. Cover the mixture with the overhang of plastic and press down to make it even. I use another loaf pan and insert it on top and press down to get an even top. If you prefer, you can also make these into any shape you like making them about 2 ounces each.
Place mixture in the refrigerator for about 30 minutes or so to set.
Unfold the plastic from the top and use that to lift the mixture from the pan. Remove the plastic and slice into 6 even bars - about 2 ounces each.
Tightly wrap individually and take them with you to enjoy whenever you want.
Store them in the refrigerator to keep them firm. They keep for a few weeks in the refrigerator and a few months in the freezer. Great snack to take with you on the go.
