Cilantro Lime Rice
Cilantro Lime Rice makes a tasty side brightening up any dish. The color of the rice shows it's loaded with cilantro while the zest and juice of the lime creates an explosion of flavor. Serve as a side, in a wrap, or to make a burrito bowl.

Ingredients
1
tablespoon
oil
1
medium clove garlic
minced
1
cup
long grain rice
1
cup
packed cilantro leaves and tender stems
divided
1 ½
cups
water
1
teaspoon
fine salt
recommended: Diamond Crystal
Zest of 1 lime
3
tablespoons
of lime juice - about 1 lime
Instructions
Add half of the cilantro into a blender and blend with the water and set aside.
Add oil to a 1½ or 2 quart saucepan over medium high heat.
Saute garlic until fragrant, about 1 minute.
Stir in the rice until rice is coated with oil then slowly add in cilantro water, salt, and lime zest.
Bring to a boil then lower to a simmer and cover. Cook for 20 minutes then remove from heat. Fluff rice with a fork.
Chop remaining cilantro. Stir in lime juice and chopped cilantro and toss until distributed.
Serve with anything you want to make delicious.
