Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Juice of 1 lime (2 tablespoons)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • Kosher salt
  • Pepper
  • 3 red, orange, and/or yellow peppers* sliced into thin strips
  • 1 - 2 avocados sliced or chopped**
  • 1 small red or sweet onion thinly sliced

Instructions

  • In a 2 cup measure or small bowl, whisk together the olive oil, red wine vinegar, lime juice, oregano, garlic powder, and a pinch of salt and pepper.
  • Add the peppers into a large bowl and massage them with your hand to break and soften them.
  • Combine the red onion and avocado with the peppers. Add the dressing and toss to combine. Season to taste with additional salt and pepper, if needed.

Notes

*Can use all red, orange, or yellow bell peppers or a combination
**You can thinly slice or chop the avocados. I like to slice them thin and reserve a few slices for garnish. The thin slices “melt” into the salad when tossing. If you prefer chunks, simply chop the avocados.
