Sweet Pepper and Avocado Salad is crispy, colorful, healthy and delicious. The perfect accompaniment to chicken, beef, pork, or seafood. Serve with crusty bread for a light and satisfying lunch or dinner.
3red,orange, and/or yellow peppers* sliced into thin strips
1 - 2avocadossliced or chopped**
1small red or sweet onionthinly sliced
Instructions
In a 2 cup measure or small bowl, whisk together the olive oil, red wine vinegar, lime juice, oregano, garlic powder, and a pinch of salt and pepper.
Add the peppers into a large bowl and massage them with your hand to break and soften them.
Combine the red onion and avocado with the peppers. Add the dressing and toss to combine. Season to taste with additional salt and pepper, if needed.
Notes
*Can use all red, orange, or yellow bell peppers or a combination**You can thinly slice or chop the avocados. I like to slice them thin and reserve a few slices for garnish. The thin slices “melt” into the salad when tossing. If you prefer chunks, simply chop the avocados.
