Cinnamon Sugared Nuts

Ingredients

pound
nuts - pecans, almonds, and/or walnuts ~ 4 cups
1
large egg white
1
tablespoon
vanilla
1
cup
sugar
1
tablespoon
cinnamon
1
teaspoon
kosher salt
Instructions
Preheat oven 300 degrees.
Line a baking sheet with parchment paper.
Combine the sugar, cinnamon, and kosher salt in a small bowl and set aside.
In a large bowl, whisk the egg white and vanilla until very frothy.
Add the nuts to the egg white mixture and stir thoroughly to coat.
Stir in the sugar mixture and thoroughly coat all the nuts.
Spread in a single layer on the prepared baking sheet.
Bake for 30 minutes, stirring halfway through baking.
Remove and let cool. Break up any clumps.
Let cool.
