Thin 7-Bone Chuck Steaks are seasoned then grilled for a quick tasty meal. An economical meat that delivers great flavor and it’s done in less than 20 minutes.This recipe feeds 4 - 6 depending on appetite. You can halve this recipe.
Season the steaks liberally on both sides. When seasoning, hold your hand at least 12 inches from the meat, then hold the salt between your fingers and thumb, letting the salt fall as you rub them together. This will allow you to control where your seasoning ensuring it’s even.
Preheat your grill to medium high heat.
Grill the steaks for about 10 to 15 minutes total (depending on your thickness) for medium rare, flipping 2 - 3 times to get a great char.
Serve as is, with a sauce or some compound butter.
If you choose to broil:
Set a rack at top position which should be 4 inches from the broiler. Preheat your broiler.
Place seasoned steaks on broiling pan or baking sheet and broil for 4 - 5 minutes per side for medium rare. You may need to rotate pan for an even char. Check steaks after 4 minutes as all ovens vary. If broiling only one steak that fits into a cast iron skillet, you will get a great char but you may need to lower the position of the oven rack.
