Pineapple Ginger Lemonade is a refreshing slushy drink that’s perfect for summer. Prepared in a blender makes it simple. Spike it up for a delicious cocktail.
This recipe was a result of just tossing some ingredients together in my blender and the outcome was too good not to share. Using canned pineapple makes it so easy and the juice is already in the can.
Ginger is a common ingredient I use in my smoothies because it’s so good for you. I usually buy it fresh, peel it, cut it up into small chunks, and freeze any pieces that are leftover. You can also find it minced in a jar or sold in a tube which is extremely convenient and worth it. If you go that route, read the ingredients and make sure it’s just ginger and not a whole bunch of other stuff. I was very disappointed when I realized minced ginger in a squeeze bottle included seven other ingredients that included sugar. If fresh isn’t an option, use ground.
You can use fresh lemon juice, but bottled works too. I won’t judge. Honestly, I keep a big bottle of lemon juice in my fridge and when I don’t have fresh lemons around or I’m feeling lazy, I use the bottled stuff. Just make sure it’s pure lemon juice and nothing else.
This spring I purchased a pineapple sage plant and it's been giving me these beautiful flavorful leaves that taste just like pineapple. If you find this herb at your garden center, buy it. Use it to flavor your water, fruit salads, or to garnish your pineapple ginger lemonade.
The combination of ginger and lemon mixed with the sweet citrusy flavor of pineapple is amazing. Slushy deliciousness perfect to quench your thirst. Make it all summer long and enjoy.
