A simple homemade poultry seasoning with the perfect blend of spices that will make your turkey, chicken, and stuffings pop with flavor. This recipe can easily be multiplied to store for future use.
Most of us know that little yellow box of poultry seasoning that is a staple for Thanksgiving. But one year, there were no little yellow boxes left on the shelves at my nearby grocery stores, and I had run out of the one in my cabinet that was probably there longer than it should have been.
That year was the year I decided to make my own seasoning with what I already had readily available in my spice cabinet.
You may notice that there are only four spices listed when the little yellow box includes a few more ingredients like rosemary, marjoram and pepper. I don’t include rosemary because not everyone in my family likes the taste.
Marjoram is one of those ingredients that gets picked last like that kid in highschool that no one wanted on their team. Why is that? Well, marjoram isn’t used a lot in recipes, therefore, I don’t often have it. It’s ok, because this simple homemade poultry seasoning is fine without it.
As for the pepper, I salt and pepper my food anyways so I kept it out. It just seemed like the right thing to do.
ONLY FOUR INGREDIENTS NEEDED
You’ll need sage, oregano, ginger and thyme. You can salt and pepper your dish or bird however you like then sprinkle this poultry seasoning to make it more delicious. You control the salt and I use Diamond Crystal kosher salt.
This poultry seasoning is what I use to make my old-fashioned bread stuffing which is out-of-this-world. It’s one of the first dishes on the table to disappear.
I use thyme leaves because it’s what I picked up at Trader Joe’s and I don’t bother grinding it because frankly, I don’t feel like it. If you want to use ground thyme or grind your own, by all means.
This recipe for poultry seasoning makes ¼ cup. You can halve, double, or triple if you like. Add salt and pepper to your dish to your taste.

SIMPLE POULTRY SEASONING

- 2 tablespoons ground sage
- 2 teaspoons oregano
- 2 teaspoons ground ginger

Instructions
- Combine all ingredients and transfer in a tightly sealed container. Using an empty spice bottle works great.
- Use on chicken, turkey, stuffing, or soups.
